  • 6 medium potatoes peeled and cubed
  • 1 cup sour cream
  • 1 cup mayonnaise
  • 1 cup shredded cheddar cheese
  • ½ cup chopped green onions
  • ½ cup cooked bacon bits
  • to taste salt and pepper

Instructions 

  1. 1. Boil the potatoes in a large pot of salted water until tender, about 15-20 minutes. Drain and let cool.
  2. 2. In a large mixing bowl, combine the sour cream, mayonnaise, shredded cheddar cheese, chopped green onions, and cooked bacon bits.
  3. 3. Add the cooled potatoes to the bowl and gently mix until all ingredients are well combined. Season with salt and pepper to taste.
  4. 4. Chill in the refrigerator for at least 1 hour before serving.
