Ingredients 

Main Ingredients

  • 4 cups Corn kernels (fresh or frozen)
  • 1 cup Cotija cheese, crumbled
  • 1 cup Mayonnaise
  • 1 cup Cilantro, chopped
  • 1 unit Juice of 1 lime
  • 1 teaspoon Chili powder
  • 1 unit Salt and pepper to taste

Instructions 

  1. 1. Heat a skillet over medium-high heat. Add the corn kernels and cook until slightly charred, about 5-7 minutes. Let cool.
  2. 2. In a large mixing bowl, combine the charred corn, Cotija cheese, mayonnaise, chopped cilantro, lime juice, and chili powder.
  3. 3. Season with salt and pepper to taste. Mix well to combine.
  4. 4. Serve immediately or chill in the refrigerator until ready to serve.
