  • 4 ears Corn on the cob
  • ½ cup Mayonnaise
  • ½ cup Cotija cheese, crumbled
  • 1 teaspoon Chili powder
  • 1 tablespoon Lime juice
  • ¼ cup Cilantro, chopped

Instructions 

  1. Preheat the grill to medium-high heat.
  2. Brush the corn with a bit of oil and place on the grill. Cook, turning occasionally, until charred in spots and tender, about 10-15 minutes.
  3. In a small bowl, mix together the mayonnaise, lime juice, and chili powder.
  4. Once the corn is done, brush each ear with the mayonnaise mixture, then sprinkle with cotija cheese and cilantro.
  5. Serve immediately with extra lime wedges if desired.
