Mexican Fiesta Pasta Salad

Main Ingredients
- 12 oz Pasta (rotini or fusilli)
- 1 cup Corn kernels (canned or fresh)
- 1 cup Black beans (canned, drained and rinsed)
- 1 cup Cherry tomatoes (halved)
- 1 cup Bell pepper (diced)
- ½ cup Red onion (finely chopped)
- ¼ cup Cilantro (chopped)
- 1 cup Cheddar cheese (shredded)
Dressing
- ½ cup Olive oil
- ¼ cup Lime juice
- 1 tablespoon Honey
- 1 teaspoon Ground cumin
- 1 teaspoon Chili powder
- 1 teaspoon Salt
- ½ teaspoon Black pepper
1. Cook pasta according to package instructions. Drain and rinse with cold water.
2. In a large mixing bowl, combine cooked pasta, corn, black beans, cherry tomatoes, bell pepper, red onion, cilantro, and cheddar cheese.
3. In a small bowl, whisk together olive oil, lime juice, honey, ground cumin, chili powder, salt, and black pepper.
4. Pour dressing over the pasta salad and toss to combine.
5. Chill in the refrigerator for at least 30 minutes before serving.
