Ingredients 

Main Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 cup tomato juice
  • ½ cup ketchup
  • ¼ cup lime juice freshly squeezed
  • 1 jalapeño, finely chopped
  • ½ cup red onion, finely chopped
  • 1 cup cucumber, diced
  • 1 cup avocado, diced
  • ¼ cup cilantro, chopped
  • to taste salt and pepper

Instructions 

  1. 1. Cook the shrimp in boiling water for about 2-3 minutes until pink and opaque. Drain and let cool.
  2. 2. In a large bowl, combine tomato juice, ketchup, lime juice, and chopped jalapeño.
  3. 3. Add the cooled shrimp, red onion, cucumber, avocado, and cilantro to the bowl. Mix well.
  4. 4. Season with salt and pepper to taste. Serve chilled.
