Main Ingredients
- 2 cups all-purpose flour
- 1 cup sugar
- 2 teaspoons baking soda
- 2 teaspoons ground cinnamon
- ½ teaspoon salt
- 3 units eggs
- ¾ cup vegetable oil
- 2 teaspoons vanilla extract
- 2 cups grated carrots
- 1 cup grated apple
- ½ cup raisins
- ½ cup chopped walnuts
Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin or line with paper liners.
In a large bowl, whisk together the flour, sugar, baking soda, cinnamon, and salt.
In another bowl, beat the eggs, then add the oil and vanilla extract. Mix well.
Stir the wet ingredients into the dry ingredients until just combined.
Fold in the grated carrots, grated apple, raisins, and chopped walnuts.
Fill the muffin cups about ¾ full with the batter.
Bake for 25 minutes or until a toothpick inserted into the center comes out clean.
Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
