Mulligatawny Soup Recipe
A hearty and spicy Indian soup with chicken, rice, and vegetables.

- 2 tablespoon Butter
- 1 cup Onion, chopped
- 2 cloves Garlic, minced
- 1 tablespoon Curry powder
- 1 teaspoon Ground cumin
- 1 teaspoon Ground coriander
- 1 teaspoon Ground turmeric
- 1 cup Carrot, diced
- 1 cup Celery, diced
- 1 cup Apple, peeled and diced
- 1 cup Cooked chicken, diced
- 4 cups Chicken broth
- 1 cup Coconut milk
- 1 cup Cooked rice
- to taste Salt and pepper
Melt butter in a large pot over medium heat. Add onion and garlic, and sauté until softened.
Add curry powder, cumin, coriander, and turmeric. Cook for 1-2 minutes until fragrant.
Add carrot, celery, and apple. Cook for 5 minutes, stirring occasionally.
Add chicken, chicken broth, and coconut milk. Bring to a boil, then reduce heat and simmer for 15-20 minutes.
Stir in cooked rice and season with salt and pepper to taste. Serve hot.
