Ingredients 

Main Ingredients

  • 2 tablespoon Butter
  • 1 cup Onion, chopped
  • 2 cloves Garlic, minced
  • 1 tablespoon Curry powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1 teaspoon Ground turmeric
  • 1 cup Carrot, diced
  • 1 cup Celery, diced
  • 1 cup Apple, peeled and diced
  • 1 cup Cooked chicken, diced
  • 4 cups Chicken broth
  • 1 cup Coconut milk
  • 1 cup Cooked rice
  • to taste Salt and pepper

Instructions 

  1. Melt butter in a large pot over medium heat. Add onion and garlic, and sauté until softened.
  2. Add curry powder, cumin, coriander, and turmeric. Cook for 1-2 minutes until fragrant.
  3. Add carrot, celery, and apple. Cook for 5 minutes, stirring occasionally.
  4. Add chicken, chicken broth, and coconut milk. Bring to a boil, then reduce heat and simmer for 15-20 minutes.
  5. Stir in cooked rice and season with salt and pepper to taste. Serve hot.
