Ingredients 

Main Ingredients

  • 2 tablespoon Butter
  • 1 medium Onion chopped
  • 500 g Mushrooms sliced
  • 4 cups Chicken broth
  • 1 cup Heavy cream
  • to taste Salt and pepper

Instructions 

  1. 1. Melt the butter in a pot over medium heat.
  2. 2. Add the chopped onion and cook until soft.
  3. 3. Add the sliced mushrooms and cook until they release their juices.
  4. 4. Pour in the chicken broth and bring to a boil. Reduce heat and simmer for 15 minutes.
  5. 5. Use a blender to puree the soup until smooth.
  6. 6. Return the soup to the pot, stir in the heavy cream, and season with salt and pepper to taste.
  7. 7. Heat through but do not boil. Serve hot.
