  • 1 egg, beaten
  • ¼ cup flour
  • ¼ cup chopped green onions
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil

Instructions 

  1. In a bowl, mix mashed potatoes, egg, flour, green onions, salt, and pepper.
  2. Heat oil in a skillet over medium heat.
  3. Drop spoonfuls of the potato mixture into the skillet and flatten slightly.
  4. Cook until golden brown on both sides, about 3-4 minutes per side.
  5. Drain on paper towels and serve hot.
