Ingredients

  • 4 cups day-old bread, cubed
  • 4 cups tomatoes, chopped
  • 1 cup cucumber, sliced
  • 1 cup red onion, thinly sliced
  • 0.5 cup basil leaves, torn
  • 0.25 cup extra-virgin olive oil
  • 2 tablespoon red wine vinegar
  • to taste salt and pepper

Instructions 

  1. 1. Heat a skillet over medium heat and toast the bread cubes until golden brown.
  2. 2. In a large bowl, combine the tomatoes, cucumber, red onion, and basil leaves.
  3. 3. Add the toasted bread cubes to the bowl.
  4. 4. Drizzle with olive oil and red wine vinegar, then season with salt and pepper to taste.
  5. 5. Toss everything together until well combined. Let it sit for about 10 minutes before serving.
