Main Ingredients
- 5 lbs Beef brisket
- ½ cup Kosher salt
- ¼ cup Brown sugar
- 2 tablespoon Black pepper coarsely ground
- 2 tablespoon Coriander seeds crushed
- 1 tablespoon Paprika
- 1 tablespoon Garlic powder
- 1 tablespoon Onion powder
- 1 teaspoon Mustard seeds crushed
- 1 teaspoon Cayenne pepper
1. Mix all the spices together in a bowl.
2. Rub the spice mix all over the beef brisket.
3. Place the brisket in a large pot and cover with water. Refrigerate for 5-7 days.
4. Remove the brisket from the brine and rinse thoroughly.
5. Smoke the brisket at 225°F (107°C) until the internal temperature reaches 190°F (88°C).
6. Let the pastrami rest for at least 30 minutes before slicing.
