Instructions
Cook noodles according to package instructions. Drain and set aside.
In a mixing bowl, whisk together peanut butter, soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger until smooth.
In a pan, sauté the shredded carrots and bell peppers until tender.
Toss the cooked noodles with the peanut sauce, sautéed vegetables, and chopped cilantro.
Garnish with chopped peanuts and serve immediately.
