Ingredients

  • 8 oz spaghetti or rice noodles
  • ¼ cup peanut butter smooth or chunky
  • 2 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 clove garlic minced
  • 1 teaspoon ginger grated
  • 1 cup shredded carrots
  • 1 cup sliced bell peppers
  • 2 tablespoon chopped cilantro
  • ¼ cup chopped peanuts for garnish

Instructions 

  1. Cook noodles according to package instructions. Drain and set aside.
  2. In a mixing bowl, whisk together peanut butter, soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger until smooth.
  3. In a pan, sauté the shredded carrots and bell peppers until tender.
  4. Toss the cooked noodles with the peanut sauce, sautéed vegetables, and chopped cilantro.
  5. Garnish with chopped peanuts and serve immediately.
