Main Ingredients
- 1 cup pearl couscous
- 2 cups water
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- ¼ cup red onion, finely chopped
- ¼ cup fresh parsley, chopped
- ¼ cup feta cheese, crumbled
Dressing
- 3 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 teaspoon honey
- 1 clove garlic, minced
- to taste salt and pepper
1. Cook the pearl couscous according to package instructions. Drain and let cool.
2. In a large mixing bowl, combine the cooked couscous, cherry tomatoes, cucumber, red onion, parsley, and feta cheese.
3. In a small bowl, whisk together the olive oil, lemon juice, honey, garlic, salt, and pepper.
4. Pour the dressing over the salad and toss to combine.
5. Serve immediately or refrigerate for later.
