Peruvian Lomo Saltado Recipe
A classic Peruvian stir-fry dish combining marinated beef, onions, tomatoes, and French fries.

Main Ingredients
- 1 lb beef sirloin, sliced into strips
- 2 tablespoon soy sauce
- 1 tablespoon red wine vinegar
- 2 garlic cloves, minced
- 1 large red onion, sliced
- 2 medium tomatoes, sliced into wedges
- 1 yellow chili pepper, sliced optional
- 1 cup French fries, cooked
- 2 tablespoon vegetable oil
- ¼ cup cilantro, chopped for garnish
- to taste salt and pepper
1. Marinate the beef with soy sauce, red wine vinegar, and garlic for at least 15 minutes.
2. Heat the oil in a wok or large skillet over high heat. Add the beef and stir-fry until browned, about 5 minutes. Remove and set aside.
3. In the same wok, add more oil if needed. Stir-fry the onions, tomatoes, and chili pepper until the onions are translucent.
4. Return the beef to the wok, add the cooked French fries, and toss everything together. Season with salt and pepper to taste.
5. Garnish with chopped cilantro and serve immediately.
