Ingredients

  • 4 cups watermelon rind peeled and cut into 1-inch pieces
  • 1 cup apple cider vinegar
  • 1 cup water
  • 1 cup sugar
  • 1 tablespoon salt
  • 1 teaspoon whole cloves
  • 1 teaspoon whole peppercorns
  • 1 stick cinnamon

Instructions 

  1. Peel the green skin off the watermelon rind and cut into 1-inch pieces.
  2. In a pot, combine vinegar, water, sugar, and salt. Bring to a boil.
  3. Add the watermelon rind, cloves, peppercorns, and cinnamon stick.
  4. Reduce heat and simmer for 45 minutes, until the rind is tender.
  5. Let cool and transfer to jars. Refrigerate before serving.
