Ingredients 

Dough

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup water warm
  • 1 tablespoon vegetable oil

Filling

  • 2 cups mashed potatoes
  • 1 cup cheddar cheese shredded
  • 1 small onion finely chopped
  • 2 tablespoon butter for frying

Instructions 

  1. In a large bowl, mix flour and salt. Add warm water and oil, mix until dough forms.
  2. Knead the dough on a floured surface until smooth. Cover and let rest for 30 minutes.
  3. For the filling, combine mashed potatoes, cheddar cheese, and chopped onion in a bowl.
  4. Roll out the dough to ⅛ inch thickness. Cut into circles using a glass or cookie cutter.
  5. Place a spoonful of filling in the center of each circle. Fold and press edges to seal.
  6. Boil a large pot of salted water. Cook perogies in batches until they float, about 3-4 minutes.
  7. In a skillet, melt butter and fry perogies until golden brown on both sides.
