Instructions
1. Heat the vegetable oil in a wok over medium-high heat.
2. Add the diced pork and cook until browned. Remove and set aside.
3. In the same wok, add the garlic and onion, and sauté until fragrant.
4. Add the frozen peas and carrots, and cook until tender.
5. Push the vegetables to one side of the wok and pour the beaten eggs into the other side. Scramble the eggs until fully cooked.
6. Add the cooked rice and pork back into the wok. Pour in the soy sauce and stir everything together until well combined and heated through.
7. Season with salt and pepper to taste. Serve hot.
