Instructions
In a large pot, melt butter over medium heat. Add onions and garlic, cook until softened.
Add diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 20 minutes.
Use an immersion blender to blend the soup until smooth. Alternatively, transfer to a blender in batches.
Stir in heavy cream, salt, and pepper. Heat through but do not boil.
Serve hot, garnished with chives, cheese, and bacon bits if desired.
