Ingredients 

Main Ingredients

  • 4 large potatoes peeled and diced
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • to taste Salt and pepper
  • 2 tablespoon butter
  • optional chopped chives, shredded cheese, bacon bits for garnish

Instructions 

  1. In a large pot, melt butter over medium heat. Add onions and garlic, cook until softened.
  2. Add diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 20 minutes.
  3. Use an immersion blender to blend the soup until smooth. Alternatively, transfer to a blender in batches.
  4. Stir in heavy cream, salt, and pepper. Heat through but do not boil.
  5. Serve hot, garnished with chives, cheese, and bacon bits if desired.
