Ingredients

  • 1 unit Eggplant diced
  • 1 unit Zucchini diced
  • 1 unit Bell Pepper diced
  • 1 unit Onion diced
  • 2 cloves Garlic minced
  • 2 cups Tomatoes chopped
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Dried Basil

Instructions 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the onions and garlic, sauté until softened.
  3. Add the eggplant, zucchini, and bell pepper. Cook until tender.
  4. Add the tomatoes, salt, pepper, thyme, and basil. Simmer for 20 minutes.
  5. Serve hot.
