Red Beans and Rice

Main Ingredients
- 1 cup dried red beans soaked overnight
- 1 cup rice
- 1 medium onion chopped
- 1 medium green bell pepper chopped
- 2 cloves garlic minced
- 1 teaspoon cajun seasoning
- 4 cups chicken broth
- 2 tablespoon olive oil
- to taste salt and pepper
1. Heat olive oil in a large pot over medium heat.
2. Add chopped onion, bell pepper, and garlic. Sauté until softened.
3. Add cajun seasoning and stir well.
4. Add soaked beans and chicken broth. Bring to a boil.
5. Reduce heat and simmer for about 45 minutes, or until beans are tender.
6. Cook rice according to package instructions.
7. Serve beans over rice. Season with salt and pepper to taste.
