Ingredients

  • 2 pounds red potatoes cut into bite-sized pieces
  • ½ cup mayonnaise
  • ¼ cup dijon mustard
  • 1 medium red onion finely chopped
  • 2 stalks celery finely chopped
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoon fresh dill chopped

Instructions 

  1. 1. Boil the potatoes in a large pot of salted water until tender, about 15-20 minutes. Drain and let cool.
  2. 2. In a large mixing bowl, combine the mayonnaise, dijon mustard, apple cider vinegar, salt, and black pepper.
  3. 3. Add the cooled potatoes, red onion, celery, and fresh dill to the bowl. Toss gently to combine.
  4. 4. Chill in the refrigerator for at least 1 hour before serving.
