- 4 cups Whole Milk
- 1 cup Heavy Cream
- 1 teaspoon Salt
- 3 tablespoon Lemon Juice
1. In a large pot, combine the milk, cream, and salt. Heat the mixture over medium heat until it reaches a gentle boil.
2. Add the lemon juice and reduce the heat to low. Stir gently for a few minutes until the mixture curdles.
3. Remove from heat and let it sit for about 10 minutes.
4. Line a strainer with cheesecloth and place it over a large bowl. Pour the mixture into the strainer and let it drain for about 20 minutes.
5. Transfer the ricotta to a bowl and use immediately or refrigerate.
