Ingredients

  • 1 rack lamb about 8 ribs
  • 2 tablespoon olive oil
  • 4 cloves garlic minced
  • 1 tablespoon rosemary chopped
  • 1 teaspoon thyme chopped
  • to taste salt
  • to taste black pepper freshly ground

Instructions 

  1. Preheat your oven to 450°F (230°C).
  2. Season the rack of lamb with salt and pepper.
  3. Heat olive oil in a large oven-proof skillet over medium-high heat. Sear the lamb for 1-2 minutes on each side until browned.
  4. Mix garlic, rosemary, and thyme in a small bowl. Rub this mixture over the lamb.
  5. Place the skillet in the preheated oven and roast for 15-20 minutes, or until the internal temperature reaches 125°F (51°C) for medium-rare.
  6. Remove from oven and let rest for 5-10 minutes before slicing.
