Instructions
Preheat your oven to 450°F (230°C).
Season the rack of lamb with salt and pepper.
Heat olive oil in a large oven-proof skillet over medium-high heat. Sear the lamb for 1-2 minutes on each side until browned.
Mix garlic, rosemary, and thyme in a small bowl. Rub this mixture over the lamb.
Place the skillet in the preheated oven and roast for 15-20 minutes, or until the internal temperature reaches 125°F (51°C) for medium-rare.
Remove from oven and let rest for 5-10 minutes before slicing.
