Ingredients 

Main Ingredients

  • 2 lbs Tomatoes halved
  • 1 head Garlic cloves separated and peeled
  • 1 medium Onion chopped
  • 2 tablespoon Olive oil
  • 4 cups Vegetable broth
  • to taste Salt and pepper

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Place the tomatoes, garlic, and onion on a baking sheet. Drizzle with olive oil and season with salt and pepper.
  3. Roast in the oven for about 30 minutes, until the tomatoes are soft and slightly charred.
  4. Transfer the roasted vegetables to a blender and add the vegetable broth. Blend until smooth.
  5. Pour the soup into a large pot and bring to a simmer. Adjust seasoning with salt and pepper as needed.
  6. Serve hot and enjoy!
