Salmon Salad Recipe
A fresh and healthy salmon salad perfect for a light lunch or dinner.

Salad Ingredients
- 2 fillets Salmon skinless
- 4 cups Mixed Greens
- 1 cup Cherry Tomatoes halved
- ½ cup Cucumber sliced
- ¼ cup Red Onion thinly sliced
Dressing Ingredients
- 3 tablespoon Olive Oil
- 1 tablespoon Lemon Juice freshly squeezed
- 1 teaspoon Dijon Mustard
- 1 clove Garlic minced
- to taste Salt and Pepper
1. Preheat grill pan over medium-high heat.
2. Season salmon fillets with salt and pepper.
3. Grill salmon for 4-5 minutes per side, until cooked through.
4. In a mixing bowl, combine olive oil, lemon juice, Dijon mustard, minced garlic, salt, and pepper. Whisk until well combined.
5. In a large bowl, toss mixed greens, cherry tomatoes, cucumber, and red onion with the dressing.
6. Flake the grilled salmon and add to the salad. Toss gently to combine.
7. Serve immediately.
