Ingredients

  • 3 pounds corned beef brisket
  • 1 large head of cabbage cut into wedges
  • 6 medium carrots peeled and cut into chunks
  • 10 small red potatoes halved
  • 4 cups water
  • 1 packet corned beef spice mix

Instructions 

  1. Place corned beef brisket into the slow cooker. Sprinkle the spice mix over the meat.
  2. Add water to cover the meat. Cover and cook on low for 8 hours.
  3. Add cabbage, carrots, and potatoes to the slow cooker. Cook for an additional 2 hours on low.
  4. Remove meat and let rest for 10 minutes before slicing. Serve with vegetables.
