Ingredients

  • 3 lbs Beef Chuck Roast
  • 4 cups Beef Broth
  • 1 lb Carrots, peeled and chopped
  • 1 lb Potatoes, peeled and chopped
  • 1 Onion, chopped
  • 3 cloves Garlic, minced
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Dried Rosemary
  • to taste Salt and Pepper

Instructions 

  1. 1. Season the beef chuck roast with salt and pepper.
  2. 2. In a large skillet, sear the roast on all sides until browned.
  3. 3. Place the roast in the slow cooker. Add the beef broth, carrots, potatoes, onion, garlic, thyme, and rosemary.
  4. 4. Cover and cook on low for 8 hours, or until the meat is tender and easily shreds with a fork.
  5. 5. Serve hot and enjoy!
