Main Ingredients

  • 4 medium potatoes peeled and thinly sliced
  • 1 medium onion thinly sliced
  • 5 large eggs
  • ½ cup olive oil
  • Salt to taste
  • Pepper to taste

Instructions 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add potatoes and onions, cook until tender, about 10 minutes.
  3. Beat eggs in a bowl, season with salt and pepper.
  4. Drain potatoes and onions, add to eggs.
  5. Pour mixture back into skillet, cook on low heat until set, about 10 minutes.
  6. Flip omelet onto a plate, slide back into skillet to cook the other side, about 5 minutes.
