Spanish Potato Omelet Recipe
A classic Spanish dish made with potatoes, onions, and eggs.

- 4 medium potatoes peeled and thinly sliced
- 1 medium onion thinly sliced
- 5 large eggs
- ½ cup olive oil
- Salt to taste
- Pepper to taste
Heat olive oil in a large skillet over medium heat.
Add potatoes and onions, cook until tender, about 10 minutes.
Beat eggs in a bowl, season with salt and pepper.
Drain potatoes and onions, add to eggs.
Pour mixture back into skillet, cook on low heat until set, about 10 minutes.
Flip omelet onto a plate, slide back into skillet to cook the other side, about 5 minutes.
