Ingredients 

Main Ingredients

  • 1 cup long grain white rice
  • 2 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 2 cups chicken broth
  • 1 teaspoon salt
  • 1 teaspoon cumin
  • 1 teaspoon chili powder

Instructions 

  1. 1. Heat the olive oil in a large skillet over medium heat.
  2. 2. Add the rice and cook, stirring frequently, until the rice is golden brown.
  3. 3. Add the onion and garlic, and cook until the onion is translucent.
  4. 4. Stir in the diced tomatoes, chicken broth, salt, cumin, and chili powder.
  5. 5. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, or until the rice is tender and the liquid is absorbed.
  6. 6. Fluff with a fork and serve.
