Main Ingredients
- 6 cups fresh spinach washed and dried
- 4 slices bacon chopped
- ¼ cup red onion thinly sliced
- ¼ cup sliced mushrooms
Dressing Ingredients
- 3 tablespoons apple cider vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon sugar
- ¼ teaspoon salt
- ¼ teaspoon black pepper
1. Cook the bacon in a skillet over medium heat until crispy. Remove bacon and set aside, leaving the drippings in the skillet.
2. Add the red onion to the skillet and cook until softened, about 2-3 minutes.
3. In a mixing bowl, whisk together the vinegar, mustard, sugar, salt, and pepper.
4. Slowly pour the bacon drippings into the vinegar mixture, whisking constantly until well combined.
5. In a large bowl, combine the spinach, bacon, red onion, and mushrooms. Pour the warm dressing over the salad and toss to coat.
6. Serve immediately.
