Ingredients 

Main Ingredients

  • 6 cups fresh spinach washed and dried
  • 4 slices bacon chopped
  • ¼ cup red onion thinly sliced
  • ¼ cup sliced mushrooms

Dressing Ingredients

  • 3 tablespoons apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon sugar
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions 

  1. 1. Cook the bacon in a skillet over medium heat until crispy. Remove bacon and set aside, leaving the drippings in the skillet.
  2. 2. Add the red onion to the skillet and cook until softened, about 2-3 minutes.
  3. 3. In a mixing bowl, whisk together the vinegar, mustard, sugar, salt, and pepper.
  4. 4. Slowly pour the bacon drippings into the vinegar mixture, whisking constantly until well combined.
  5. 5. In a large bowl, combine the spinach, bacon, red onion, and mushrooms. Pour the warm dressing over the salad and toss to coat.
  6. 6. Serve immediately.
