Instructions
Heat olive oil in a pot over medium heat.
Add chopped onion and minced garlic, sauté until soft.
Add fresh spinach and cook until wilted.
Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 10 minutes.
Use a blender to puree the soup until smooth.
Return soup to the pot, stir in milk, and season with salt and pepper to taste. Heat through without boiling.
