Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups fresh spinach
  • 4 cups vegetable broth
  • 1 cup milk
  • to taste salt and pepper

Instructions 

  1. Heat olive oil in a pot over medium heat.
  2. Add chopped onion and minced garlic, sauté until soft.
  3. Add fresh spinach and cook until wilted.
  4. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 10 minutes.
  5. Use a blender to puree the soup until smooth.
  6. Return soup to the pot, stir in milk, and season with salt and pepper to taste. Heat through without boiling.
