Ingredients

  • 4 large tomatoes
  • 1 cup cooked rice
  • ½ cup chopped onion
  • ½ cup crumbled feta cheese
  • 2 tablespoon olive oil
  • 1 teaspoon dried oregano
  • to taste salt and pepper

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. Cut the tops off the tomatoes and scoop out the insides. Set aside.
  3. In a mixing bowl, combine cooked rice, chopped onion, feta cheese, olive oil, oregano, salt, and pepper.
  4. Stuff the tomatoes with the rice mixture and place them in a baking dish.
  5. Bake in the preheated oven for 25 minutes or until the tomatoes are tender.
