- 4 large tomatoes
- 1 cup cooked rice
- ½ cup chopped onion
- ½ cup crumbled feta cheese
- 2 tablespoon olive oil
- 1 teaspoon dried oregano
- to taste salt and pepper
Preheat oven to 375°F (190°C).
Cut the tops off the tomatoes and scoop out the insides. Set aside.
In a mixing bowl, combine cooked rice, chopped onion, feta cheese, olive oil, oregano, salt, and pepper.
Stuff the tomatoes with the rice mixture and place them in a baking dish.
Bake in the preheated oven for 25 minutes or until the tomatoes are tender.
