  • 4 cups sliced summer squash
  • 1 cup chopped onion
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 cup crushed crackers
  • 2 tablespoon butter melted
  • to taste salt and pepper

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a large pot, boil the sliced squash and chopped onion until tender. Drain well.
  3. In a mixing bowl, combine the squash, onion, shredded cheese, sour cream, salt, and pepper. Mix well.
  4. Transfer the mixture to a baking dish. Top with crushed crackers and drizzle with melted butter.
  5. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown.
