Ingredients 

Main Ingredients

  • 2 large sweet potatoes peeled and cubed
  • 2 large russet potatoes peeled and cubed
  • ½ cup mayonnaise
  • ¼ cup dijon mustard
  • 1 tablespoon apple cider vinegar
  • 2 stalks celery chopped
  • ¼ cup red onion finely chopped
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper to taste
  • 2 tablespoon fresh parsley chopped

Instructions 

  1. 1. Boil the sweet potatoes and russet potatoes in a pot of salted water until tender, about 15-20 minutes. Drain and let cool.
  2. 2. In a large mixing bowl, combine the mayonnaise, dijon mustard, and apple cider vinegar.
  3. 3. Add the cooled potatoes, celery, red onion, salt, and black pepper to the bowl. Mix well to combine.
  4. 4. Garnish with fresh parsley before serving. Enjoy!
