Ingredients 

Main Ingredients

  • 1 can Black-eyed peas drained and rinsed
  • 1 can Black beans drained and rinsed
  • 1 cup Corn kernels fresh or frozen
  • 1 cup Diced tomatoes drained
  • ½ cup Chopped red onion
  • ½ cup Chopped green bell pepper
  • ½ cup Chopped cilantro
  • ¼ cup Olive oil
  • ¼ cup Red wine vinegar
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper

Instructions 

  1. In a large mixing bowl, combine black-eyed peas, black beans, corn, tomatoes, red onion, green bell pepper, and cilantro.
  2. In a small bowl, whisk together olive oil, red wine vinegar, salt, and black pepper.
  3. Pour the dressing over the bean mixture and toss to coat.
  4. Cover and refrigerate for at least 1 hour before serving to allow the flavors to meld.
