Main Ingredients
- 1 can Black-eyed peas drained and rinsed
- 1 can Black beans drained and rinsed
- 1 cup Corn kernels fresh or frozen
- 1 cup Diced tomatoes drained
- ½ cup Chopped red onion
- ½ cup Chopped green bell pepper
- ½ cup Chopped cilantro
- ¼ cup Olive oil
- ¼ cup Red wine vinegar
- 1 teaspoon Salt
- ½ teaspoon Black pepper
In a large mixing bowl, combine black-eyed peas, black beans, corn, tomatoes, red onion, green bell pepper, and cilantro.
In a small bowl, whisk together olive oil, red wine vinegar, salt, and black pepper.
Pour the dressing over the bean mixture and toss to coat.
Cover and refrigerate for at least 1 hour before serving to allow the flavors to meld.
