Ingredients

  • 1 can kidney beans drained and rinsed
  • 1 can garbanzo beans drained and rinsed
  • 1 can green beans drained and rinsed
  • 0.5 cup red onion finely chopped
  • 0.5 cup celery finely chopped
  • 0.5 cup red bell pepper finely chopped
  • 0.25 cup fresh parsley chopped
  • 0.25 cup olive oil
  • 0.25 cup apple cider vinegar
  • 2 tablespoon sugar
  • Salt and pepper to taste

Instructions 

  1. In a large bowl, combine kidney beans, garbanzo beans, and green beans.
  2. Add red onion, celery, red bell pepper, and parsley.
  3. In a small bowl, whisk together olive oil, apple cider vinegar, sugar, salt, and pepper.
  4. Pour the dressing over the bean mixture and toss to coat.
  5. Chill in the refrigerator for at least 1 hour before serving.
