Ingredients

  • 4 Bolillo rolls or French bread rolls
  • 1 cup Refried beans
  • 1 cup Shredded cheese like Oaxaca or Monterey Jack
  • 1 Pico de gallo for topping

Instructions 

  1. Preheat your oven to 350°F (175°C).
  2. Slice the bolillo rolls in half lengthwise.
  3. Spread a layer of refried beans on each half.
  4. Top with shredded cheese.
  5. Place the rolls on a baking sheet and bake for 10 minutes or until the cheese is melted and bubbly.
  6. Remove from the oven and top with pico de gallo. Serve warm.
