- 4 eggs
- 1 cup Greek yogurt
- 2 cloves garlic, minced
- 2 tablespoon butter
- 1 teaspoon paprika
- 1 teaspoon dried mint
- to taste salt and pepper
1. In a mixing bowl, combine Greek yogurt and minced garlic. Season with salt and pepper to taste. Set aside.
2. In a saucepan, bring water to a gentle simmer. Add a splash of vinegar if desired.
3. Crack eggs into the simmering water and poach for 3-4 minutes, until whites are set but yolks are still runny. Remove with a slotted spoon and drain on paper towels.
4. In a small pan, melt butter over medium heat. Add paprika and dried mint, and cook for 1-2 minutes until fragrant.
5. To serve, spread the yogurt mixture on a plate, top with poached eggs, and drizzle with the spiced butter. Serve immediately.
