Ukrainian Red Borscht Soup
A traditional Ukrainian soup made with beets, cabbage, potatoes, and beef.

Main Ingredients
- 1 lb beef stew meat cut into bite-sized pieces
- 4 cups water
- 2 medium beets peeled and grated
- 1 medium carrot peeled and grated
- 1 medium onion chopped
- 3 cups cabbage shredded
- 3 medium potatoes peeled and cubed
- 2 tablespoon tomato paste
- 2 cloves garlic minced
- 1 tablespoon vinegar
- to taste salt and pepper
- 1 cup sour cream for serving
- 2 tablespoon fresh dill chopped, for garnish
1. In a large pot, bring the water to a boil. Add the beef and cook until tender, about 30 minutes.
2. Add the beets, carrot, and onion to the pot. Cook for another 10 minutes.
3. Stir in the cabbage, potatoes, tomato paste, and garlic. Cook until the vegetables are tender, about 20 minutes.
4. Add the vinegar, salt, and pepper. Adjust seasoning to taste.
5. Serve hot, garnished with a dollop of sour cream and a sprinkle of fresh dill.
