Vegetable Beef Soup Recipe

Main Ingredients
- 1 lb Beef stew meat cut into bite-sized pieces
- 2 cups Carrots sliced
- 2 cups Potatoes diced
- 1 cup Celery sliced
- 1 cup Onion chopped
- 1 can Diced tomatoes 14.5 oz can
- 6 cups Beef broth
- 2 teaspoon Salt to taste
- 1 teaspoon Black pepper to taste
- 2 teaspoon Dried thyme
- 1 cup Frozen peas
1. In a large pot, brown the beef stew meat over medium heat.
2. Add the onions and cook until softened.
3. Pour in the beef broth and bring to a boil.
4. Add the carrots, potatoes, celery, and diced tomatoes. Reduce heat and simmer for 45 minutes.
5. Season with salt, pepper, and thyme. Add frozen peas and cook for another 5 minutes.
6. Serve hot and enjoy!
