Ingredients 

Main Ingredients

  • 1 tablespoon Olive Oil
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 1 medium Bell Pepper, diced
  • 1 can Diced Tomatoes (14.5 oz)
  • 1 can Black Beans, drained and rinsed (15 oz)
  • 1 can Kidney Beans, drained and rinsed (15 oz)
  • 1 cup Vegetable Broth
  • 2 tablespoon Chili Powder
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add the diced onion and cook until translucent, about 5 minutes.
  3. Add the minced garlic and cook for another minute.
  4. Add the diced bell pepper and cook for 3-4 minutes.
  5. Stir in the diced tomatoes, black beans, kidney beans, and vegetable broth.
  6. Add the chili powder, ground cumin, paprika, salt, and black pepper. Stir well.
  7. Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes.
  8. Serve hot, garnished with your favorite toppings.
