West African Peanut Stew Recipe

Ingredients 

Main Ingredients

  • 2 tablespoon vegetable oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • 1 can diced tomatoes (400g)
  • 4 cups vegetable broth
  • 2 medium sweet potatoes, peeled and cubed
  • ½ cup peanut butter
  • 1 bunch collard greens, chopped
  • to taste salt and pepper
  • 1 cup cooked rice for serving

Instructions 

  1. Heat the oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes.
  2. Add the garlic and ginger, and cook for another 2 minutes.
  3. Stir in the cumin, coriander, turmeric, and paprika, and cook for 1 minute.
  4. Add the diced tomatoes, vegetable broth, and sweet potatoes. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the sweet potatoes are tender.
  5. Stir in the peanut butter until well combined. Add the collard greens and cook until wilted, about 5 minutes. Season with salt and pepper to taste.
  6. Serve the stew over cooked rice.
