Ingredients

  • 1 lb Chicken breast, diced
  • 2 cans White beans, drained and rinsed
  • 1 cup Chicken broth
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 teaspoon Ground cumin
  • 1 teaspoon Dried oregano
  • 1 teaspoon Chili powder
  • 1 Salt and pepper to taste

Instructions 

  1. 1. In a large pot, heat some oil over medium heat. Add the diced chicken and cook until browned.
  2. 2. Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
  3. 3. Stir in the ground cumin, dried oregano, and chili powder. Cook for another minute.
  4. 4. Add the white beans and chicken broth. Bring to a simmer and cook for about 20 minutes.
  5. 5. Season with salt and pepper to taste. Serve hot.
