Ingredients 

Main Ingredients

  • 1 lb Chicken breast, cooked and shredded
  • 1 tablespoon Olive oil
  • 1 Onion, diced
  • 2 cloves Garlic, minced
  • 2 cans Great Northern beans, drained and rinsed
  • 1 can Corn, drained
  • 2 cups Chicken broth
  • 1 teaspoon Cumin
  • 1 teaspoon Oregano
  • ½ teaspoon Chili powder
  • ½ teaspoon Salt
  • ¼ teaspoon Black pepper
  • 1 cup Sour cream
  • ½ cup Cilantro, chopped

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat. Add diced onion and cook until translucent.
  2. 2. Add minced garlic and cook for another minute.
  3. 3. Stir in the cooked chicken, beans, corn, chicken broth, cumin, oregano, chili powder, salt, and pepper. Bring to a boil.
  4. 4. Reduce heat and simmer for 20 minutes, stirring occasionally.
  5. 5. Remove from heat and stir in sour cream and chopped cilantro.
  6. 6. Serve hot, garnished with extra cilantro if desired.
