- 2 medium zucchinis grated
- 0.5 cup all-purpose flour
- 0.25 cup grated Parmesan cheese
- 1 large egg beaten
- 2 cloves garlic minced
- 0.25 teaspoon salt
- 0.25 teaspoon black pepper
- 2 tablespoons olive oil
Grate the zucchinis and squeeze out excess moisture.
In a bowl, mix grated zucchini, flour, Parmesan, egg, garlic, salt, and pepper.
Heat olive oil in a pan over medium heat.
Scoop batter into the pan and flatten into pancakes.
Cook until golden brown, about 2-3 minutes per side.
Serve warm.
