Main Ingredients
- 10 cups Zucchini, finely chopped
- 4 cups Onions, finely chopped
- 2 cups Green bell peppers, finely chopped
- 2 cups Red bell peppers, finely chopped
- ¼ cup Salt
- 3 cups Sugar
- 2 cups Apple cider vinegar
- 1 tablespoon Celery seed
- 1 tablespoon Mustard seed
1. Combine zucchini, onions, green and red bell peppers in a large bowl. Sprinkle with salt and let sit for 2 hours.
2. Rinse and drain the vegetables well.
3. In a large pot, combine sugar, apple cider vinegar, celery seed, and mustard seed. Bring to a boil.
4. Add the drained vegetables to the pot. Simmer for 30 minutes.
5. Pack the hot relish into sterilized canning jars. Seal and process in a boiling water bath for 10 minutes.
