Zuppa Toscana Recipe
A hearty Italian soup with sausage, potatoes, and kale.

Main Ingredients
- 1 lb Italian sausage mild or spicy
- 4 cups Chicken broth
- 3 cups Russet potatoes sliced
- 2 cups Kale chopped
- 1 cup Heavy cream
- 1 Onion diced
- 3 cloves Garlic minced
- to taste Salt and pepper
1. In a large pot, cook the sausage over medium heat until browned. Remove and set aside.
2. In the same pot, add the diced onion and cook until translucent. Add the garlic and cook for another minute.
3. Pour in the chicken broth and bring to a boil. Add the sliced potatoes and cook until tender, about 10 minutes.
4. Add the cooked sausage back to the pot along with the chopped kale. Simmer for 5 minutes.
5. Stir in the heavy cream and season with salt and pepper to taste. Serve hot.
